Ferreli is an artisan bakery located in Lanusei, Sardinia, at the heart of the region famed for Pane Carasau and Pistoccu.
We are surrounded by the lush landscapes of Ogliastra, one of the greenest and most pristine areas of Sardinia, a land celebrated for the longevity of its inhabitants, often called the land of centenarians.
The recipe for Pane Carasau dates back centuries, originally created for Sardinian shepherds who spent long months away from home tending their flocks in the mountains.
This traditional Sardinian flatbread was designed to last, its remarkable long shelf life allows it to stay perfectly crisp for up to one year, as long as it’s kept dry.
The preparation follows an ancient and precise process: once the dough is made, it’s rolled into paper-thin sheets and baked in a very hot wood-fired oven (840°–930°F) until it gently puffs up like a golden bubble.
Each loaf is then carefully cut in half along its circumference and returned to the oven for a second baking, achieving the irresistible crispiness and golden hue known as carasadura, the signature of authentic Pane Carasau.
