The traditional Macarrones de Busa, a classic Sardinian pasta, takes its name from the tool used to shape it. It originates from the Barbagia region, a remote and rugged area in the heart of Sardinia. The name comes from the Arabic word bus, which referred to the stem of the “Arundo aegyptiaca”, a plant traditionally used to make the hollow reed straws employed in shaping the pasta. Even when metal rods replaced the plant stem, the original name remained unchanged. Variations of this pasta are also made in other parts of southern Italy, where it is commonly known as pasta busiata.
